One of last weeks meals was a lamb tagine, the first one ive made myself and it was so delicious that we have invited my in-laws over on Sunday to eat it with us again. The sprinkling of pomegranate on top was a very nice addition, surprisingly it suited the dish perfectly, very unexpected.
I used a tin of prunes rather than dried apricots, and i couldn't find the ras el hanout spice mix in any of the supermarkets i tried so i just added equal amounts of all of the spices which typically make up the mix (see the photo below). I also cooked the whole lot on the stove rather than the oven as i haven't got a lidded casserole dish big enough. And i put all ingredients except the coriander and pomegranate into the pan in one go and cooked on a medium to low heat for one hour.
We ate it with plain basmati rice which was just fine. On the whole it was an easy meal with results worth sharing with family or friends!

I even overheard my hubby telling someone it was nice, and that must mean i did well, lol! I never measure oil, just slosh some in (probably too much)! x
